Description

These Strawberry Crunch Cookies are a delightful treat that combines soft, buttery cookies with a crunchy strawberry-vanilla topping. The perfect balance of sweet and tangy, these cookies are ideal for anyone craving a fruity, flavorful dessert. Quick to prepare and made with simple ingredients, these cookies are perfect for gatherings, parties, or a cozy afternoon snack. Try them with chocolate chips, a dash of strawberry extract, or a unique crumble topping to elevate the flavor and texture!

Ingredients

  • 1¼ cups all-purpose flour
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • ⅛ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Add the egg to the butter mixture and mix well until fully incorporated.
  • Gradually add the dry ingredients to the wet mixture, stirring until combined.
  • Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten the cookie dough balls slightly with the back of a spoon or your fingers.
  • Bake for 8-10 minutes or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chocolate-strawberry twist, add ½ cup of chocolate chips to the dough.
  • Add a few drops of strawberry extract for a more intense strawberry flavor.
  • Experiment with different crumble toppings like graham cracker crumbs or crushed vanilla wafers.
  • To make a gluten-free version, use a gluten-free flour blend.
