Description
Shamrock Cucumber Tea Sandwiches are a fun and refreshing treat, perfect for St. Patrick’s Day or any light snack occasion. Made with soft English muffins, creamy garlic-infused cream cheese, and crisp cucumber, these bite-sized sandwiches are a crowd-pleaser with their festive shamrock shape and delightful flavors.
Ingredients
- 8 English muffins (plain)
- 1 package (8 oz) cream cheese, softened
- 1 small garlic clove, minced
- 1 cucumber (English variety preferred)
- 1/2 cup Monterey Jack cheese, shredded (optional)
- Fresh parsley (optional, for garnish)
- 1/4 bell pepper (optional, for garnish)
Instructions
- Prepare the Cream Cheese Spread: In a mixing bowl, combine softened cream cheese, minced garlic, and shredded Monterey Jack cheese (if using). Mix until smooth.
- Slice the English Muffins: Split each English muffin in half and lightly toast them if desired. Use a shamrock-shaped cookie cutter to cut out shamrock shapes from each muffin half.
- Slice the Cucumber: Thinly slice the cucumber and set aside.
- Assemble the Sandwiches: Spread a layer of the cream cheese mixture on each shamrock-shaped muffin piece. Top with cucumber slices.
- Garnish: Optionally, garnish with fresh parsley and finely diced bell pepper for a pop of color.
- Serve: Arrange the sandwiches on a platter and serve immediately.
Notes
- Add a chopped jalapeño or hot sauce to the cream cheese for a spicy twist.
- Use fresh herbs like dill or chives in the cream cheese mixture for extra flavor.
- Consider adding thin avocado or tomato slices to the sandwiches for a vegetarian variation.
- If making ahead, prepare the cream cheese spread and cucumber slices separately, but assemble the sandwiches just before serving to prevent sogginess.
