Ingredients
- 3 bunches rainbow carrots, washed and trimmed (leave 2–3 inches of stems for presentation)

Instructions
1. Preheat the Oven
- Set your oven to 450°F (230°C).
2. Prepare the Carrots
- Wash the rainbow carrots thoroughly. Trim the tops, leaving a bit of the stems for presentation.
3. Season the Carrots
- Place the carrots on a foil-lined baking sheet.
- Drizzle with olive oil, then use your hands to coat evenly.
- Sprinkle with salt and black pepper to taste.
4. Roast
- Bake for 20 minutes, or until the carrots are tender and the tips are slightly crispy.
5. Serve
