Ingredients
For the Potatoes:
- 2 pounds baking potatoes, cubed
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 whole garlic head, top sliced off
- 1 lemon, quartered
For the Toppings:
- 4 ounces feta cheese, cut into chunks
- 1 tablespoon honey
- ¼ cup fresh basil, chopped

Prepare the Potatoes:
- Preheat oven to 400°F (200°C).
- Wash and cube potatoes, leaving the skin on for extra crispiness.

- Toss potatoes with olive oil, thyme, oregano, salt, and pepper in a large bowl.
- Spread evenly on a baking sheet.
- Add the whole garlic head (cut side up) and lemon quarters to the sheet.
- Roast for 30-35 minutes, flipping halfway through, until golden and crispy.

- Scatter feta chunks over the potatoes.
- Roast for 5 more minutes until the feta warms slightly.

- Remove from the oven, drizzle with honey, and squeeze the roasted garlic over the potatoes.
