Ingredients

  • 6 tablespoons butter, divided

  • 1/2 teaspoon pepper

Instructions

  • Boil the Potatoes: In a large saucepan or Dutch oven, bring 2-1/2 quarts of water and salt to a boil. Add the potatoes and reduce the heat to a simmer. Cook for about 3 minutes until slightly tender but still firm. Drain.
  • Caramelize the Onions: While the potatoes cook, melt 3 tablespoons of butter in a large skillet over medium heat. Add the onions and cook, stirring frequently, until golden brown (about 10-12 minutes). Remove and set aside.
  • Cook the Potatoes: In the same skillet, melt the remaining 3 tablespoons of butter. Add the drained potatoes and cook, stirring occasionally, until golden brown and crisp (about 8-10 minutes).
  • Combine and Serve: Add the caramelized onions, minced rosemary, and pepper to the skillet with the potatoes. Toss to combine and cook for an additional minute. Serve immediately.
