Ingredients

For the crust:

  • 1 1/2 cups chocolate wafer crumbs

  • 3 large eggs
  • 1/4 cup Irish cream liqueur

Instructions

  1. Prepare the crust: Preheat the oven to 350°F (175°C). In a bowl, combine chocolate wafer crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and then let it cool.
  2. Make the filling: Beat the softened cream cheese and sugar together until smooth. Add eggs one at a time, beating well after each addition. Stir in Irish cream liqueur and vanilla extract. Add sour cream and mix until combined.
  3. Bake the cheesecake: Pour the cheesecake filling over the cooled crust. Bake at 350°F for 50-55 minutes, or until the center is set. Let it cool at room temperature, then refrigerate for at least 4 hours or overnight.
  4. Prepare the ganache: In a small saucepan, heat semisweet chocolate chips and butter over low heat, stirring until smooth and glossy. Pour ganache over the cooled cheesecake and spread evenly.
