Ingredients
- 2 cups grated raw potato
- 1/2 cup mashed potato
- 1 cup flour
- 1 tsp baking powder
- 1 tsp salt
- 3/4 cup milk
- 2 tbsp butter, melted
Instructions
- Prepare the Potatoes: Grate the raw potato and place it in a clean kitchen towel. Squeeze out excess moisture.
- Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, and salt.
- Combine Wet Ingredients: Add the grated raw potato, mashed potato, milk, and melted butter to the dry ingredients. Stir until well combined.
- Cook the Boxty: Heat a skillet over medium heat and melt a small amount of butter. Spoon about 1/4 cup of the batter into the pan for each pancake, spreading it out into a round shape. Cook for about 3-4 minutes on each side, until golden brown and crispy.
- Serve: Serve warm with your favorite toppings, such as sour cream, butter, or jam.
