Description

These whimsical treats combine fluffy yellow cupcakes, vibrant green frosting, and charming fondant leprechaun hats, making them the perfect festive dessert. Fun to make and even more fun to eat, these cupcakes will be the star of your St. Paddy’s Day celebrations!


Ingredients

  • 1 box cake mix (plus ingredients as per the box instructions)
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 3-4 tablespoons milk
  • 1 teaspoon vanilla extract
  • Green and black food coloring
  • Icing fondant (for the hats)

Instructions

  1. Prepare the Cupcakes: Preheat oven and prepare cake mix according to package directions. Line a cupcake tin, pour the batter in, and bake as instructed. Cool completely before decorating.
  2. Make the Frosting: In a mixing bowl, beat softened butter and powdered sugar until smooth. Add milk, vanilla, and green food coloring until the desired shade is achieved.
  3. Frost the Cupcakes: Transfer frosting into a piping bag and swirl onto each cooled cupcake.
  4. Assemble the Hats: Roll out green fondant, cut into circles for the hat base. Form a small cylinder of fondant for the hat crown and attach it to the base with water.
  5. Create the Hatband: Roll black fondant into a thin strip, wrap around the crown, and secure with edible glue or water.
  6. Make the Buckle: Roll white fondant into a small square, cut out the center, and attach to the hatband with edible glue.
  7. Final Touches: Let the hats dry for a few hours, then place on top of cupcakes.
