Ingredients
For the Steak:

- ¾ cup heavy cream

Instructions
1. Prepare the Steak:
- Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.
- Pat the steaks dry and season generously with salt and black pepper on both sides.
2. Cook the Steak:
- Heat a cast-iron skillet or heavy-bottomed pan over high heat until smoking hot.
- Add 1 tablespoon butter to the pan. Once melted, place the steaks in the skillet.
- Sear for 2-3 minutes per side for medium-rare, adjusting for your preferred doneness.
- Transfer the steaks to a plate, loosely cover with foil, and let them rest while you prepare the sauce.
3. Make the Gorgonzola Sauce:
- In the same pan, reduce heat to medium-low and add 1 tablespoon butter.
- Stir in minced garlic and sauté for 30 seconds until fragrant.
- Pour in heavy cream, stirring to combine with the pan drippings. Simmer gently for 2-3 minutes.
- Add Gorgonzola cheese, stirring until melted and smooth.
- Season with a pinch of salt and black pepper to taste.
4. Serve:
- Slice the rested steak against the grain.
