Ingredients
- 1 1/2 cups carrots, sliced
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 (14 oz) can tomatoes
- 2 tablespoons olive oil
- 1 cabbage, coarsely chopped
- 8 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 4-5 minutes.
- Stir in the minced garlic and sauté for 1 minute, until fragrant.
- Add the sliced carrots to the pot and sauté for 3-4 minutes.
- Pour in the chicken broth and add the canned tomatoes. Stir and bring to a boil.
- Once boiling, add the chopped cabbage, sprinkle in Italian seasoning, and stir.
- Let the cabbage cook for 5-6 minutes, until tender but still slightly crisp.
- Taste and adjust seasoning with salt and pepper.
