Description

Ingredients

  • 1 1/2 cups carrots, sliced
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 (14 oz) can tomatoes
  • 2 tablespoons olive oil
  • 1 cabbage, coarsely chopped
  • 8 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and sauté until translucent, about 4-5 minutes.
  • Stir in the minced garlic and sauté for 1 minute, until fragrant.
  • Add the sliced carrots to the pot and sauté for 3-4 minutes.
  • Pour in the chicken broth and add the canned tomatoes. Stir and bring to a boil.
  • Once boiling, add the chopped cabbage, sprinkle in Italian seasoning, and stir.
  • Let the cabbage cook for 5-6 minutes, until tender but still slightly crisp.
  • Taste and adjust seasoning with salt and pepper.
