Ingredients
- 6 large russet potatoes (peeled and cubed)
- 2 cups chicken or vegetable broth
- 3 garlic cloves (minced)
- 1 tsp fresh thyme (chopped)
- 1 tsp fresh rosemary (chopped)
- 1/4 cup fresh parsley (chopped)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup butter (cubed)
- 4 oz cream cheese (cubed)
- 1/2 cup whole milk (warmed)
Instructions
- Place the peeled and cubed potatoes into the crockpot.
- Pour the chicken or vegetable broth over the potatoes.
- Add the minced garlic, thyme, rosemary, parsley, salt, and pepper. Stir to combine.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the potatoes are tender and easily pierced with a fork.
- Once cooked, add the cubed butter and cream cheese, then mash the potatoes until smooth.
- Gradually add warm milk until the potatoes reach your desired consistency. Taste and adjust seasoning as needed.
Notes
- If you prefer a cheesy version, stir in shredded cheese during the mashing process.
