Description

These creamy and buttery Crockpot Mashed Potatoes are the ultimate side dish for any meal. The slow cooker makes them ultra-tender and rich with the addition of cream cheese, fresh herbs, and broth, offering minimal effort for maximum flavor.


Ingredients

  • 6 large russet potatoes (peeled and cubed)
  • 2 cups chicken or vegetable broth
  • 3 garlic cloves (minced)
  • 1 tsp fresh thyme (chopped)
  • 1 tsp fresh rosemary (chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup butter (cubed)
  • 4 oz cream cheese (cubed)
  • 1/2 cup whole milk (warmed)

Instructions

  • Place the peeled and cubed potatoes into the crockpot.
  • Pour the chicken or vegetable broth over the potatoes.
  • Add the minced garlic, thyme, rosemary, parsley, salt, and pepper. Stir to combine.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the potatoes are tender and easily pierced with a fork.
  • Once cooked, add the cubed butter and cream cheese, then mash the potatoes until smooth.
  • Gradually add warm milk until the potatoes reach your desired consistency. Taste and adjust seasoning as needed.

  • If you prefer a cheesy version, stir in shredded cheese during the mashing process.
