Ingredients
- 3/4 cup uncooked white rice
- 2 cups whole milk, divided
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Instructions
- In a medium saucepan, combine the uncooked white rice and 1 1/2 cups of whole milk. Bring to a boil over medium-high heat.
- Once it begins to boil, reduce the heat to low and cover the saucepan. Let the rice simmer for 15-20 minutes, or until the rice is tender and most of the milk has been absorbed.
- Stir in the remaining 1/2 cup of milk, granulated sugar, and cinnamon. Continue to cook over low heat, stirring occasionally, for 5-10 minutes, or until the pudding thickens to a creamy consistency.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Serve warm, or refrigerate for a chilled dessert. Garnish with additional cinnamon or a drizzle of honey for added flavor.
Notes
- To add extra texture and flavor, try incorporating raisins, nuts, or even chocolate chips into the pudding.
- Spice things up with nutmeg, cardamom, or a splash of maple syrup for a unique twist.
- For a vegan version, substitute almond or coconut milk and use maple syrup or another sugar alternative.
