Description

Indulge in a rich and creamy Crockpot Chicken Spaghetti, a fuss-free, slow-cooked meal loaded with tender shredded chicken, melted cheese, and a flavorful sauce. This comforting dish is perfect for busy weeknights, meal prep, or family dinners. Just set it and forget it—your slow cooker does all the work!

Ingredients

  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup chicken broth (or water)
  • 1 packet (1 oz) ranch seasoning mix
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup sour cream
  • 1 ½ cups shredded cheddar cheese
  • 1 lb spaghetti (cooked per package instructions)
  • ½ cup grated Parmesan cheese (optional for topping)

Instructions

  1. Prepare the Chicken – Place chicken breasts (or thighs) in the slow cooker.
  2. Make the Sauce – In a bowl, mix cream of chicken soup, cream of mushroom soup, chicken broth, ranch seasoning, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir until smooth.
  3. Slow Cook – Pour the sauce over the chicken. Cover and cook:
    • On low: 6-7 hours
    • On high: 3-4 hours, until chicken is fully cooked and tender.
  4. Shred the Chicken – Remove chicken from the crockpot, shred with two forks, then return it to the sauce and mix well.
  5. Add Creaminess & Cheese – Stir in sour cream and shredded cheddar cheese until smooth. Let cook on low for 10-15 minutes to melt the cheese.
  6. Cook the Spaghetti – While the sauce is finishing, cook spaghetti according to package instructions. Drain.
  7. Combine & Serve – Stir the cooked spaghetti into the crockpot. If the sauce is too thick, add more chicken broth to loosen. Serve immediately, garnished with Parmesan cheese.

Notes

  • For Extra Flavor – Add red pepper flakes for spice or swap cheddar for mozzarella.
  • Keep Spaghetti Firm – Cook pasta separately and add just before serving.
  • Gluten-Free Option – Use gluten-free spaghetti and ensure soups are gluten-free.
