Ingredients
For the biscuits:
- 1 package Cheddar Bay Biscuit Mix
- 1 tsp garlic powder
- 1 tsp Italian seasoning
For the crab filling:
- 1 lb lump crab meat (fresh or frozen)
- ¼ tsp paprika
- ½ tsp onion powder
- ½ cup mayonnaise (plus extra if needed)
- 1 tbsp mustard
- ½ sleeve Ritz crackers, crushed into crumbs
- 1 cup grated parmesan cheese
For the lemon butter:
- 2 tbsp melted unsalted butter
- 1 tsp fresh lemon juice
Instructions
- Preheat oven to 375°F and spray muffin tins with nonstick spray.
- Mix the Cheddar Bay Biscuit Mix according to the package instructions, adding garlic powder and Italian seasoning to the dough.
- In a separate bowl, combine crab meat, paprika, onion powder, mayonnaise, mustard, crushed Ritz crackers, and parmesan cheese. Mix until well combined; add extra mayo if the mixture feels dry.
- Scoop a portion of the biscuit dough into the muffin tins, creating a well in the center of each.
- Fill the well with crab mixture, then top with more dough to seal.
- Bake for 12-15 minutes, or until golden brown.
- While baking, mix melted butter with lemon juice. Once biscuits are done, brush lemon butter over them.
- Serve warm and enjoy!
