Ingredients

For the biscuits:

  • 1 package Cheddar Bay Biscuit Mix
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

For the crab filling:

  • 1 lb lump crab meat (fresh or frozen)
  • ¼ tsp paprika
  • ½ tsp onion powder
  • ½ cup mayonnaise (plus extra if needed)
  • 1 tbsp mustard
  • ½ sleeve Ritz crackers, crushed into crumbs
  • 1 cup grated parmesan cheese

For the lemon butter:

  • 2 tbsp melted unsalted butter
  • 1 tsp fresh lemon juice

Instructions

  1. Preheat oven to 375°F and spray muffin tins with nonstick spray.
  2. Mix the Cheddar Bay Biscuit Mix according to the package instructions, adding garlic powder and Italian seasoning to the dough.
  3. In a separate bowl, combine crab meat, paprika, onion powder, mayonnaise, mustard, crushed Ritz crackers, and parmesan cheese. Mix until well combined; add extra mayo if the mixture feels dry.
  4. Scoop a portion of the biscuit dough into the muffin tins, creating a well in the center of each.
  5. Fill the well with crab mixture, then top with more dough to seal.
  6. Bake for 12-15 minutes, or until golden brown.
  7. While baking, mix melted butter with lemon juice. Once biscuits are done, brush lemon butter over them.
  8. Serve warm and enjoy!
