Ingredients

  • 1 cup chickpea flour
  • 1 cup water
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 cup diced bell peppers
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced cherry tomatoes
  • 1/4 cup chopped spinach
  • 1/4 cup sliced black olives
  • 1/4 cup diced red onion
  • 1/4 cup vegan cheese shreds
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine chickpea flour, water, salt, garlic powder, onion powder, and oregano. Whisk until smooth.
  3. Heat olive oil in a skillet over medium heat. Sauté the bell peppers, mushrooms, cherry tomatoes, spinach, olives, and red onion for 3-4 minutes until softened. Season with salt and pepper.
  4. Pour the chickpea batter into a greased pizza pan or baking sheet. Spread evenly to form the pizza crust.
  5. Top with sautéed vegetables and vegan cheese.
  6. Bake for 20-25 minutes or until the crust is golden and the toppings are cooked through.
  7. Allow to cool slightly before slicing and serving.
