Ingredients
For the Bruschetta:
- 1 baguette, sliced into ½-inch thick pieces
- 2 cups cherry tomatoes, halved
- 8 oz burrata cheese
- ¼ cup fresh basil leaves, torn
- 2 tbsp extra-virgin olive oil, plus more for brushing
- 1 garlic clove, peeled
- 1 tbsp balsamic glaze
- Salt & freshly ground black pepper, to taste
Instructions
1. Prepare the Bread
- Preheat oven to 400°F (200°C).
- Arrange baguette slices on a baking sheet and brush lightly with olive oil.
- Toast in the oven for 10–12 minutes, or until golden and crisp.
- While warm, rub one side of each toast with a peeled garlic clove for added flavor.
2. Prepare the Tomato Topping
- In a bowl, mix halved cherry tomatoes, torn basil, olive oil, salt, and black pepper.
- Toss well and let sit for 10 minutes to enhance the flavors.
3. Assemble the Bruschetta
- Arrange the toasted bread on a serving platter.
- Tear burrata into pieces and distribute evenly over each toast.
- Spoon the tomato mixture over the burrata.
- Drizzle with balsamic glaze and sprinkle with additional salt & pepper to taste.
4. Serve Immediately
- Garnish with extra fresh basil leaves, if desired.
- Serve promptly to enjoy the contrast of textures and flavors.
