Description

This Burrata Bruschetta is an elegant Italian appetizer featuring creamy burrata cheese, juicy cherry tomatoes, and fragrant basil on crispy toasted bread. Finished with a drizzle of balsamic glaze, this simple yet flavorful dish is perfect for gatherings, parties, or a light starter.

Ingredients

For the Bruschetta:

  • 1 baguette, sliced into ½-inch thick pieces
  • 2 cups cherry tomatoes, halved
  • 8 oz burrata cheese
  • ¼ cup fresh basil leaves, torn
  • 2 tbsp extra-virgin olive oil, plus more for brushing
  • 1 garlic clove, peeled
  • 1 tbsp balsamic glaze
  • Salt & freshly ground black pepper, to taste

Instructions

1. Prepare the Bread

  1. Preheat oven to 400°F (200°C).
  2. Arrange baguette slices on a baking sheet and brush lightly with olive oil.
  3. Toast in the oven for 10–12 minutes, or until golden and crisp.
  4. While warm, rub one side of each toast with a peeled garlic clove for added flavor.

2. Prepare the Tomato Topping

  1. In a bowl, mix halved cherry tomatoes, torn basil, olive oil, salt, and black pepper.
  2. Toss well and let sit for 10 minutes to enhance the flavors.

3. Assemble the Bruschetta

  1. Arrange the toasted bread on a serving platter.
  2. Tear burrata into pieces and distribute evenly over each toast.
  3. Spoon the tomato mixture over the burrata.
  4. Drizzle with balsamic glaze and sprinkle with additional salt & pepper to taste.

4. Serve Immediately

  • Garnish with extra fresh basil leaves, if desired.
  • Serve promptly to enjoy the contrast of textures and flavors.

Notes

  • Roasted Tomatoes – For deeper flavor, roast cherry tomatoes with olive oil and herbs at 350°F (175°C) for 20 minutes.
  • Alternative Cheeses – Swap burrata with fresh mozzarella, ricotta, or goat cheese.
  • Additional Toppings – Enhance with prosciutto, a drizzle of pesto, or red pepper flakes for extra flavor.
  • Grilled Bread – Instead of baking, grill the bread for a smoky touch.
