These Boston Cream Pie Cookie Bites take all the flavors of the classic dessert and transform them into a bite-sized treat! Ingredients
Cookies
- 1 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
Cream Filling
- 1 cup milk
- ¼ cup sugar
- 2 tablespoons cornstarch
- ¼ teaspoon salt
- 2 egg yolks
- 1 teaspoon vanilla extract
Chocolate Topping
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
Instructions
1️⃣ Make the Cookies
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, beat the butter and sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing until smooth.
- Stir in flour, baking powder, and salt, mixing until a soft dough forms.
- Roll the dough into small balls and place them on the prepared baking sheet. Flatten slightly.
- Bake for 10-12 minutes, until the edges are lightly golden. Let cool completely.
2️⃣ Prepare the Cream Filling
- In a saucepan over medium heat, whisk together milk, sugar, cornstarch, and salt.
- In a separate bowl, whisk the egg yolks. Slowly add a few tablespoons of the warm milk mixture to temper the yolks.
- Gradually whisk the yolk mixture back into the saucepan. Cook, stirring constantly, until thickened (about 5 minutes).
- Remove from heat, stir in vanilla extract, and let cool completely.
3️⃣ Make the Chocolate Topping
- Heat heavy cream in a small saucepan or microwave until steaming (not boiling).
- Pour over the chocolate chips, let sit for 1-2 minutes, then stir until smooth. Let cool slightly.
4️⃣ Assemble the Cookie Bites
- Spoon or pipe the cream filling onto half of the cooled cookies.
- Top with the remaining cookies to form sandwiches.
- Drizzle or spoon the chocolate ganache over each cookie bite.
- Let set for at least 15 minutes before serving.
