These Boston Cream Pie Cookie Bites take all the flavors of the classic dessert and transform them into a bite-sized treat! Ingredients

Cookies

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Cream Filling

  • 1 cup milk
  • ¼ cup sugar
  • 2 tablespoons cornstarch
  • ¼ teaspoon salt
  • 2 egg yolks
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions

1️⃣ Make the Cookies

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, beat the butter and sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until smooth.
  4. Stir in flour, baking powder, and salt, mixing until a soft dough forms.
  5. Roll the dough into small balls and place them on the prepared baking sheet. Flatten slightly.
  6. Bake for 10-12 minutes, until the edges are lightly golden. Let cool completely.

2️⃣ Prepare the Cream Filling

  1. In a saucepan over medium heat, whisk together milk, sugar, cornstarch, and salt.
  2. In a separate bowl, whisk the egg yolks. Slowly add a few tablespoons of the warm milk mixture to temper the yolks.
  3. Gradually whisk the yolk mixture back into the saucepan. Cook, stirring constantly, until thickened (about 5 minutes).
  4. Remove from heat, stir in vanilla extract, and let cool completely.

3️⃣ Make the Chocolate Topping

  1. Heat heavy cream in a small saucepan or microwave until steaming (not boiling).
  2. Pour over the chocolate chips, let sit for 1-2 minutes, then stir until smooth. Let cool slightly.

4️⃣ Assemble the Cookie Bites

  1. Spoon or pipe the cream filling onto half of the cooled cookies.
  2. Top with the remaining cookies to form sandwiches.
  3. Drizzle or spoon the chocolate ganache over each cookie bite.
  4. Let set for at least 15 minutes before serving.
