Ingredients
- 1 bunch asparagus, ends trimmed
- 1 tbsp extra virgin olive oil
- Kosher salt and freshly ground black pepper, to taste
- 2 sheets frozen puff pastry, thawed
- 8 oz brie cheese, cut into 8 slices
- 1 large egg, beaten
- ¼ cup honey
- 2 tbsp salted butter
- 1 tbsp fresh thyme leaves
- Pinch of crushed red pepper flakes (optional)
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Season Asparagus: Toss asparagus with olive oil, salt, and pepper in a bowl.
- Assemble Pastries: Roll out puff pastry sheets on a floured surface and cut each into 4 squares (total of 8 squares). Place a slice of brie on each square, top with a few asparagus spears, and fold two opposite corners over the filling, pressing gently to seal.
- Apply Egg Wash: Transfer the pastries to the baking sheet and brush the tops with the beaten egg.
- Bake: Bake for 20-25 minutes, or until the pastries are golden brown and flaky.
- Make Thyme Honey: While baking, melt honey, butter, and thyme in a small saucepan over low heat until fragrant.
- Serve: Drizzle the warm pastries with thyme honey and sprinkle with crushed red pepper flakes, if desired. Serve immediately.
Notes
- Ensure the asparagus is dry before assembling to prevent soggy pastry.
- Refrigerate assembled pastries (unbaked) for up to 24 hours and bake fresh.
- Swap brie for camembert or goat cheese for a different flavor profile.
