Ingredients
For the Enchirito:
- 1 pound ground beef
- 1 packet taco seasoning
- 1/4 cup water
- 6 medium flour tortillas
- 1 can (16 ounces) refried beans
- 1/2 cup diced onions
- 1 can (10 ounces) red enchilada sauce
- 1 cup shredded cheddar cheese

Instructions
- Prepare the Ground Beef: In a skillet over medium heat, cook ground beef until browned, breaking it apart. Drain excess grease, stir in taco seasoning and water, then simmer for 5 minutes. Remove from heat.

- Assemble the Enchiritos: Lay a tortilla flat. Spread a layer of refried beans, add seasoned beef and diced onions. Roll up the tortilla like a burrito.
- Prepare the Baking Dish: Place each rolled enchirito seam-side down in a greased 9x13-inch baking dish.
- Add Sauce and Cheese: Pour enchilada sauce over the rolled enchiritos and sprinkle with shredded cheddar cheese.
- Bake: Preheat oven to 375°F (190°C). Cover with foil and bake for 15 minutes. Remove foil and bake for 5-7 more minutes until cheese is melted and bubbly.
