Description

This White Chocolate Salted Caramel Ganache combines rich white chocolate and homemade salted caramel for a luxurious, silky texture that enhances any dessert. Perfect for filling macarons, topping cakes, or swirling into brownies, this easy-to-make ganache is an irresistible treat. Ready in just 15 minutes, it's an essential recipe for bakers seeking a versatile, sweet-salty flavor combination that works with a variety of desserts. Store it in the fridge or freezer for later use, and enjoy its creamy indulgence whenever needed.

Ingredients

  • Homemade salted caramel sauce (or store-bought, heated up)
  • White chocolate (couverture chocolate is best, but high-quality eating chocolate like Lindt works well)

Instructions

  • In a saucepan, heat the sugar and water over medium heat, stirring occasionally until golden brown.
  • Slowly add cream, stirring constantly to prevent burning. The mixture will bubble.
  • Add unsalted butter and whisk until smooth. Stir in salt flakes.
  • Transfer caramel mixture to a stand mixer bowl.
  • Add chopped white chocolate to the hot caramel and mix on low speed until smooth.
  • Pour ganache into a shallow dish and cover with plastic wrap touching the surface.
  • Let cool and set before using, or refrigerate until ready.

Notes

Optional variations:

  • Caramel Milk Chocolate Ganache: Use milk chocolate for a richer, creamier ganache.
  • Flavored Ganache: Add vanilla extract, bourbon, or cinnamon for a unique twist.
  • Salt-Free Version: Omit salt flakes for a sweet white chocolate caramel ganache.
