Ingredients

  • 3 (14.5-ounce) cans chickpeas, drained and rinsed
  • 2 (14.5-ounce) cans artichoke hearts, drained
  • 2 lemons (zest and juice)
  • 1 shallot, chopped
  • 1/2 cup olive oil
  • 1 cup crumbled feta cheese (optional, but recommended)
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Drain and rinse the chickpeas and artichoke hearts. Pat the chickpeas dry with a paper towel to ensure they become crispy while roasting.
  • In a large mixing bowl, combine chickpeas, artichoke hearts, and chopped shallot.
  • Zest one lemon and juice both lemons into the bowl. Add olive oil, salt, and pepper, then toss everything together until well-coated.
  • Spread the mixture evenly on a baking sheet lined with parchment paper. Ensure the chickpeas are spread out for even roasting.
  • Roast for 25-30 minutes, stirring halfway through to ensure even roasting. The chickpeas should be golden and crispy, and the artichokes should be slightly browned and tender.
  • Once roasted, remove from the oven and let cool slightly.
  • If desired, sprinkle with crumbled feta and fresh parsley before serving.
