Description

St. Patrick’s Day Reuben Dip is a creamy and savory appetizer that brings the classic Reuben sandwich flavors into a warm, shareable dip. With corned beef, sauerkraut, Swiss cheese, and a rich cream cheese base, this dip is perfect for your St. Patrick’s Day celebration or any casual gathering. Serve with rye bread or crackers for a fun and flavorful twist on the traditional Reuben.

Ingredients

  • 8 oz onion and chive-flavored cream cheese
  • 1/2 cup mayonnaise
  • 1/4 cup Thousand Island dressing
  • 1/2 pound deli corned beef, chopped
  • 1 cup sauerkraut (drained)
  • 1 1/2 cups shredded Swiss cheese
  • Fresh chives (for garnish)
  • Rye bread or crackers (for dipping)

Instructions

  • Prepare the Dip Mixture:
In a large bowl, combine the onion and chive-flavored cream cheese, mayonnaise, and Thousand Island dressing. Stir until smooth and well combined.

  • Add the Filling:
Add the chopped deli corned beef, sauerkraut, and shredded Swiss cheese to the cream cheese mixture. Stir until evenly combined.

  • Bake the Dip:
Preheat the oven to 375°F (190°C). Transfer the dip mixture to a baking dish and spread it evenly. Bake for 20-25 minutes, or until the top is golden brown and bubbly.

  • Garnish and Serve:
Once baked, remove from the oven and sprinkle chopped fresh chives on top. Serve warm with rye bread slices or crackers for dipping.

Notes

  • Add More Cheese: For an extra cheesy dip, add more shredded mozzarella or cheddar.
  • Spicy Version: Add a few dashes of hot sauce or crushed red pepper flakes for some heat.
  • Vegetarian: Swap the corned beef for finely chopped mushrooms or tempeh.
