Description

This Red Lentil Nacho Dip is a healthy and flavorful alternative to traditional nacho dips. Creamy and rich in flavor, it’s made with red lentils, nutritional yeast, and salsa, making it a delicious, gluten-free, and vegan dip. Perfect for parties, game days, or casual snacking, this dip offers a guilt-free, cheesy taste without the dairy, ensuring it’s a crowd-pleaser for everyone, no matter their dietary preferences.

Ingredients

  • 2 cups red lentils
  • 1/2 cup salsa (your favorite variety)
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup nutritional yeast
  • 1/2 tsp minced garlic
  • 1/2 tsp onion powder
  • Corn chips (for serving)

Instructions

  • In a large pot, bring about 4 cups of water to a boil with the red lentils. Reduce the heat to low and cook, covered, until the lentils are tender and the water is absorbed (or follow package instructions).
  • Once the lentils are cooked, transfer them to a large food processor and add the salsa, parsley, nutritional yeast, garlic, and onion powder.
  • Blend the mixture until smooth and creamy.
  • Serve the dip with your favorite corn chips.

Notes

  • Spicy Kick: Add chopped jalapeños or a few dashes of hot sauce for a spicy boost.
  • Herb Variations: Try using cilantro or basil instead of parsley for a different flavor profile.
  • Creamier Texture: Blend in coconut milk or vegetable broth for an even smoother, creamier dip.
