Description

This Pistachio Tiramisu is a decadent twist on the classic tiramisu, featuring coffee-soaked ladyfingers layered with a rich pistachio cream and creamy mascarpone. Ingredients

  • 1 package ladyfingers
  • 1 cup espresso or strong coffee
  • 2 tablespoons rum or almond extract (optional)
  • 4 large egg yolks
  • ½ cup sugar
  • 8 oz mascarpone cheese
  • ¼ cup pistachio cream
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Chopped pistachios, for topping

Instructions

  • Prepare Coffee Soak: Mix espresso and rum or almond extract in a shallow dish.
  • Temper the Eggs: Over a double boiler, whisk egg yolks and sugar until the sugar dissolves and the mixture thickens.
  • Make Pistachio Filling: Beat mascarpone, pistachio cream, and heavy cream together until smooth. Gently fold in the egg mixture.
  • Assemble Layers: Dip ladyfingers quickly in the coffee soak and layer them in a dish. Spread pistachio cream mixture over the ladyfingers. Repeat the layers.
  • Finish & Decorate: Pipe extra pistachio cream on top, and use a skewer to create a feathering pattern. Top with chopped pistachios.
  • Chill: Refrigerate for at least 4 hours or overnight to allow the flavors to meld.

Notes

  • Variations: Make it alcohol-free by using almond extract, add extra pistachios for crunch, or garnish with fresh berries for a fruity touch.
  • Storage/Reheating: Store covered in the fridge for up to 3 days. Freezing is not recommended as it may change the texture.
