Description

These Mini Jalapeño Popper Egg Rolls are a crispy, savory appetizer that packs a flavorful punch. Filled with cream cheese, cheddar cheese, spicy jalapeños all wrapped in a golden, crispy egg roll shell, they offer a perfect fusion of creamy, spicy, and savory flavors. Great for parties or as a snack, these egg rolls are sure to impress.

Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 3-5 jalapeños, seeded and diced
  • 2 green onions, finely sliced
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 12 egg roll wrappers
  • Vegetable oil for frying

Instructions

  • Prepare the Filling: In a large bowl, combine the softened cream cheese, shredded cheddar cheese , diced jalapeños, sliced green onions, garlic powder, salt, and pepper. Mix well until fully combined.
  • Assemble the Egg Rolls: Lay an egg roll wrapper diagonally on a clean surface. Place a generous spoonful of the filling near the center. Fold the bottom corner over the filling, then fold in the sides, and roll tightly towards the top corner, sealing the edge with a dab of water. Repeat with the remaining wrappers and filling.
  • Heat the Oil: In a deep skillet or pot, heat vegetable oil over medium-high heat to 350°F (175°C).
  • Fry the Egg Rolls: Carefully place the assembled egg rolls into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes per side, or until golden brown and crispy.
  • Drain and Serve: Remove the egg rolls from the oil and drain on a paper towel-lined plate. Serve warm with ranch dressing, sweet chili sauce, or your favorite dipping sauce.

Notes

  • Spicy Kick: Add hot sauce or a pinch of cayenne pepper to the filling for extra heat.
  • Cheese Options: Substitute cheddar with pepper jack or Monterey Jack cheese for a different flavor.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Reheat in the oven or air fryer for a crispy finish.
