Description

Hummus Soup is a creamy, hearty dish inspired by hummus, made with chickpeas, tahini, and aromatic spices. This comforting soup is perfect for cozy nights or as a nutritious, satisfying meal. The rich, velvety texture and flavor make it an ideal option for a plant-based meal, and it’s easy to make with simple ingredients.


Ingredients

For the soup

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 garlic cloves, peeled
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon ground cumin
  • 1 yellow onion, chopped
  • 2 carrots, peeled and coarsely chopped
  • 4 cups vegetable broth
  • 2 cups water
  • 1/4 cup tahini
  • Juice of 2 fresh lemons
  • Fresh flat-leaf parsley, chopped (for garnish)

Instructions

  • In a large pot, heat olive oil over medium heat. Add garlic cloves and sauté until fragrant, about 2 minutes.
  • Add cumin and chopped onion, cook for 5-7 minutes until the onion softens.
  • Add chopped carrots and cook for 2-3 minutes, stirring occasionally.
  • Pour in vegetable broth and water. Stir in kosher salt and bring the mixture to a simmer.
  • Simmer for 15-20 minutes until the carrots are tender.
  • Add chickpeas and cook for another 5 minutes.
  • Remove from heat and blend the soup until smooth and creamy using an immersion blender, or transfer in batches to a blender.
  • Return to low heat, stir in tahini and lemon juice. Adjust seasoning with salt or more lemon juice if desired.
  • Garnish with remaining chickpeas, parsley, and a drizzle of olive oil before serving.
