Description
Hummus Soup is a creamy, hearty dish inspired by hummus, made with chickpeas, tahini, and aromatic spices. This comforting soup is perfect for cozy nights or as a nutritious, satisfying meal. Ingredients
For the soup
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 2 garlic cloves, peeled
- 2 tablespoons olive oil
- 1 1/2 teaspoons kosher salt
- 1 teaspoon ground cumin
- 1 yellow onion, chopped
- 2 carrots, peeled and coarsely chopped
- 4 cups vegetable broth
- 2 cups water
- 1/4 cup tahini
- Juice of 2 fresh lemons
- Fresh flat-leaf parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add garlic cloves and sauté until fragrant, about 2 minutes.
- Add cumin and chopped onion, cook for 5-7 minutes until the onion softens.
- Add chopped carrots and cook for 2-3 minutes, stirring occasionally.
- Pour in vegetable broth and water. Stir in kosher salt and bring the mixture to a simmer.
- Simmer for 15-20 minutes until the carrots are tender.
- Add chickpeas and cook for another 5 minutes.
- Remove from heat and blend the soup until smooth and creamy using an immersion blender, or transfer in batches to a blender.
- Return to low heat, stir in tahini and lemon juice. Adjust seasoning with salt or more lemon juice if desired.
- Garnish with remaining chickpeas, parsley, and a drizzle of olive oil before serving.
