Description

Ingredients

  • 1 ball pizza dough, store-bought or homemade
  • 1/2 cup fresh ricotta cheese
  • 1/2 cup cream cheese, room temperature
  • 1/4 cup grated Parmesan
  • 1/4 cup heavy cream
  • 1 whole head of garlic
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta
  • 1/2 cup shredded mozzarella
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  • Prepare the Garlic: Cut the top off the garlic head, drizzle with olive oil and salt, wrap in foil, and roast at 400°F for about 35 minutes, until soft.
  • Make the Sauce: Blend the ricotta, cream cheese, Parmesan, heavy cream, and roasted garlic paste until smooth. Season to taste.
  • Prepare the Pizza: Preheat the oven to 475°F. Roll out the pizza dough to your desired size.
  • Assemble the Pizza: Spread the white sauce over the dough, then layer with spinach. Sprinkle mozzarella, feta, oregano, and red pepper flakes (if using). Drizzle olive oil on top.
  • Bake: Bake for 12-15 minutes, or until the crust is golden and the cheese is melted.

Notes

  • Add Kalamata olives or sun-dried tomatoes for a tangy Mediterranean twist.
  • Use whole wheat dough for a heartier crust.
