Ingredients
For the Pineapple Rings:
- 8 pineapple rings
- 1 cup pineapple juice (for soaking)
- 1 ½ cups all-purpose flour
- 1 (10-oz.) bag sweetened coconut flakes
- 2 large eggs
- ½ cup coconut milk
- Vegetable oil (for frying)
For the Coconut Dipping Sauce:
- 4 oz. cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- Extra coconut milk (to adjust consistency)
Instructions
- Soak the Pineapple:
- Place pineapple rings in a bowl and cover with pineapple juice.
- Let soak for at least 1 hour, then drain and pat dry.
- Prepare the Coating:
- Set up three bowls: one with flour, one with whisked eggs & coconut milk, and one with sweetened coconut flakes.
- Coat the Pineapple Rings:
- Dip each pineapple ring into flour, then egg mixture, then coconut flakes, pressing gently to coat evenly.
- Fry the Pineapple Rings:
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Fry each ring for about 1 minute per side, until golden brown.
- Remove and drain on paper towels.
- Make the Dipping Sauce:
- Beat cream cheese and powdered sugar until smooth.
- Stir in vanilla extract and coconut milk to reach desired consistency.
- Serve & Enjoy:
- Serve warm with dipping sauce, fresh mint, or a tropical fruit salad.
