Description

Ingredients

  • 200g enoki mushrooms
  • ½ cup all-purpose flour
  • 5 tablespoons cornstarch
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ¾ cup cold soda water
  • Neutral oil for frying (canola, vegetable, or peanut oil)

Instructions

  1. Prepare the Mushrooms: Trim the root ends of the enoki mushrooms and separate them into small bundles. Rinse gently under cold water and pat dry thoroughly.
  2. Make the Batter: In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, garlic powder, and paprika. Slowly add cold soda water, stirring until smooth and slightly runny.
  3. Heat the Oil: In a heavy-bottomed pot or deep skillet, heat oil to 375°F (190°C).
  4. Coat the Mushrooms: Dip each enoki bundle into the batter, allowing excess to drip off.
  5. Fry: Carefully place coated mushrooms into the hot oil, frying in batches for 2-3 minutes until golden brown.
  6. Drain & Serve: Remove with a slotted spoon and place on a paper towel-lined plate. Serve immediately with your favorite dipping sauce.
