Ingredients
- 200g enoki mushrooms
- ½ cup all-purpose flour
- 5 tablespoons cornstarch
- ½ teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
- ¾ cup cold soda water
- Neutral oil for frying (canola, vegetable, or peanut oil)
Instructions
- Prepare the Mushrooms: Trim the root ends of the enoki mushrooms and separate them into small bundles. Rinse gently under cold water and pat dry thoroughly.
- Make the Batter: In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, garlic powder, and paprika. Slowly add cold soda water, stirring until smooth and slightly runny.
- Heat the Oil: In a heavy-bottomed pot or deep skillet, heat oil to 375°F (190°C).
- Coat the Mushrooms: Dip each enoki bundle into the batter, allowing excess to drip off.
- Fry: Carefully place coated mushrooms into the hot oil, frying in batches for 2-3 minutes until golden brown.
- Drain & Serve: Remove with a slotted spoon and place on a paper towel-lined plate. Serve immediately with your favorite dipping sauce.
