Description

This Crisp Cucumber, Onion, and Tomato Salad is a light, Mediterranean-inspired dish perfect for hot summer days. With refreshing cucumbers, juicy tomatoes, and tangy onions, tossed in a simple vinaigrette, this healthy salad bursts with freshness. Ideal as a side dish for grilled meats or a standalone light lunch, it’s easy to make, versatile, and full of flavor.

Ingredients

  • 2 large cucumbers, thinly sliced
  • 3 ripe tomatoes, chopped or sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley or basil, chopped
  • 1/4 cup feta cheese crumbles (optional)

For the dressing:

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar or fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 clove garlic, minced

Instructions

  • Prepare the Vegetables: Wash and dry the cucumbers, tomatoes, and herbs. Thinly slice the cucumbers and onions, then chop the tomatoes into bite-sized pieces.
  • Make the Dressing: In a small bowl, whisk together olive oil, red wine vinegar (or lemon juice), honey, oregano, salt, pepper, and minced garlic until well combined.
  • Assemble the Salad: In a large bowl, combine the sliced cucumbers, tomatoes, onions, and chopped herbs. Add feta cheese, if desired.
  • Dress the Salad: Pour the dressing over the salad and toss gently to combine.
  • Chill: Let the salad sit for about 10 minutes before serving to allow the flavors to meld together.

Notes

  • For added flavor and protein, consider adding Kalamata olives or chickpeas.
  • You can swap red wine vinegar for balsamic vinegar or use fresh lemon juice for a citrusy twist.
  • If you prefer a heartier meal, top the salad with grilled chicken or a protein of your choice.
  • To keep the salad crisp, salt the cucumbers and let them sit for 10-15 minutes, then pat dry before mixing.
