Ingredients

  • 8 oz bowtie pasta (farfalle)
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/2 cup cucumber, diced
  • 1/2 cup corn
  • 1/4 cup fresh cilantro, chopped

Instructions

  • Cook the bowtie pasta according to the package instructions. Drain and set aside to cool.
  • Dice the avocados, halve the cherry tomatoes, finely chop the red onion, and dice the cucumber.
  • In a large bowl, combine the cooled pasta with the diced avocados, tomatoes, red onion, cucumber, and corn.
  • Gently toss to combine.
  • Add the chopped cilantro and toss again.
