Description

Artichoke Parmesan Crostini are crispy, bite-sized appetizers featuring a savory blend of artichoke hearts, Parmesan cheese, and zesty seasonings atop golden baguette slices. These cheesy, flavorful toasts are perfect for entertaining and can be prepared ahead of time for easy assembly.

Ingredients

For the Artichoke Topping:

  • 1 (15-ounce) can whole artichoke hearts, drained
  • ½ cup shredded Parmesan cheese
  • ½ cup mayonnaise
  • 1 tbsp lemon juice
  • ½ tsp granulated garlic
  • ½ tsp granulated onion
  • ½ tsp coarse sea salt
  • ½ tsp freshly ground black pepper

For the Crostini:

  • 24 thin slices from a small baguette loaf (or store-bought crostini toasts)
  • Fresh chives, finely chopped (for garnish)

Instructions

1. Prepare the Artichoke Mixture:

  • Drain and gently squeeze the artichoke hearts to remove excess liquid.
  • Pulse artichokes in a food processor until finely chopped (7–9 pulses), or chop by hand.
  • In a bowl, mix the chopped artichokes with Parmesan, mayonnaise, lemon juice, granulated garlic, granulated onion, sea salt, and black pepper. Adjust seasoning to taste.

2. Prepare the Baguette Slices:

  • Slice the baguette into ⅓-inch slices.
  • Arrange on a baking sheet and broil briefly until lightly golden (no need to flip).

3. Assemble and Broil:

  • Top each toasted baguette slice with the artichoke mixture, covering the surface completely.
  • Place oven rack at the second highest level.
  • Broil for about 2 minutes, until the topping is bubbly and golden. Watch closely to prevent burning.

4. Serve:

  • Garnish with fresh chives and cracked black pepper.
  • Serve immediately while warm.

Notes

  • Make-Ahead Option: The artichoke mixture can be prepared up to 24 hours in advance and stored in the refrigerator.
  • Bread Alternatives: Use gluten-free baguette slices or crackers for a gluten-free version.
  • Cheese Variations: Swap Parmesan with Asiago, Romano, Gruyère, or Fontina for a different flavor.
